Taste of Summer: Grilled Pork Chops with Peach Lime Topping

I love summer. One of the many things I love about summer is that most of my favorite foods involve the grill. My man is an awesome cook, and his grilling skills are perfection. So, when at all possible, he handles the grilling duties. Some days, he's working late and I have to take over...the food just never turns out quite the same (he did go to culinary school for a year, after all). Luckily, last night he was here to grill my favorite pork chops, and they were amazing! It's a super easy recipe that you and your family are sure to enjoy.

Grilled Pork Chops with Peach Lime Topping

Ingredients:
Bone-In Pork Chops
Jack Stack Barbecue Meat & Poultry KC Barbecue Rub
Chili Powder
Salt
Pepper
Peach
Lime
Red Onion

Directions:
Season the pork chops (with a light coating of Jack Stack KC Barbecue Rub, chili powder, salt, and pepper), let the chops rest. To make your topping, dice the peach into small pieces, place in bowl. Cut half of a small/medium red onion and dice into small pieces. Squeeze the juice of a lime into the bowl of diced peaches and onions, add salt and pepper. Stir ingredients together. Place in refrigerator to chill while pork chops are on the grill. Grill 12 minutes per side or until done. Remove from grill, and drizzle desired amount of topping on each pork chop. Enjoy!
